Apple Breakfast Fritters


 

1 Medium apple -- peeled and

cored 1 egg

1 Slice bread -- cut in pieces

1/8 Tsp. vanilla extract

1 Tbsp. water

artificial sweetener to equal 4 Tsp. sugar

1 Dash cinnamon

Grate apple and set aside. Combine all ingredients except apple, in blender. Blend until mixture is smooth. Fold in grated apple; mix well. Drop by tablespoons onto a hot nonstick skillet, or pour out 1 enormous fritter. Cook on both sides to a golden brown. Makes 1 serving. Counts as 1 bread, 1 egg, 1 fruit.

Variations: Blueberry Pancakes: Omit apple. Fold 1/2 cup crushed blueberries into blended egg-bread mixture. Bake as stated. Pineapple Fritters: Omit apple. Fold 2 slices of canned pineapple cut into very small pieces into blended egg-bread mixture. Bake as stated. Pineapple Fritters were my favorite.
